I almost gave this one up, but suddenly I found a reference on medical lore that gives a reasonable explanation to nurses removing flowers every night. The oxygen consumption myth may play a part, but a reasonable explanation is that them cut flowers in water is breeding ground for bacteria - not to mention the bugs that may love the habitat.
However, the oxygen thing is myth...
