Debunked: Eating carrots may improve night vision, because of large amounts of Vitamin A.

Carrots are high in vitamin A; vitamin A deficiency leads to night blindness. But once vitamin A doses are adequate, increasing the levels doesn't improve night vision; in fact, one study found an inverse correlation (eating more carrots was associated with worse night vision), perhaps because people were trying to self-medicate their perceived night blindness.
